Trick or Treat! Apple Nachos

“This is Halloween, everybody make a scene…” My son insists on playing the song, “This is Halloween” on repeat most days after school lol.

Last year I shared some tips on making it a healthy Halloween, this year I thought it would be fun to share a quick and easy recipe that you can make with all the leftover Halloween candy.

Since I’m all about trying to live a balanced life, there are elements of nourishing and fun foods in the recipe by using fresh fruit, nut or sun butter, and candy. The recipe takes tart and crisp granny smith apples and is topped off with a marshmallow swirl and Halloween candy.

As the song continues, “Everybody is waiting for the next surprise…” why not surprise your kids one afternoon after school by making this recipe together?

Trick or Treat! Apple Nachos

Prep: 15 minutes Serves: 8-10

Ingredients:

  • 3-4 Granny Smith apples, cored and sliced

  • 1/3 cup nut or sun butter

  • 1 cup mini marshmallows

  • 1 tablespoon butter or coconut oil

  • 1/3 cup strawberry or seedless raspberry jam

  • 1 cup favorite Halloween candy

Optional: Candy eyes, sprinkles, melted chocolate, shredded coconut

Instructions:

  1. In a microwave safe bowl, add marshmallows and butter/coconut oil. Microwave on high for about 60 seconds or until the marshmallows are puffy and the butter/coconut oil is melted. Stir to combine.

  2. Place the nut or sun butter and jam in microwave safe bowls. Microwave on high for 30-60 seconds or until warm.

  3. Place the apple slices on a plate. Drizzle with warm marshmallow, nut or sun butter, and jam.

  4. Top with candy and enjoy!
